Grilled Pumpkin

We were heading to a friend’s place for dinner and I offered to bring some grilled pumpkin. The kids absolutely love it — they can’t stop eating it! It’s one of those simple sides that somehow disappears first.

Especially good when you reheat it in the air fryer… it gets all warm, slightly crisp at the edges again.. And the shaved parmesan at the end? Ooh lah lah… that salty, savoury finish takes it to another level!

Here’s how I do it!

Ingredients
1 whole pumpkin
Olive oil
Paprika powder
Garlic powder
Salt
Pepper

Method

1. Prep the Pumpkin

• Wash the pumpkin thoroughly and dry it completely.

• Remove the seeds and slice the pumpkin into 1-inch thick pieces, keeping the skin on.

2. Preheat the Oven

• Preheat the oven to maximum heat.

3. Season the Pumpkin

• Arrange the pumpkin slices neatly on a baking tray.

• Brush both sides generously with olive oil — this helps the seasoning stick and gives the pumpkin a better char while grilling.

• Season with salt, pepper, paprika powder, and garlic powder.

4. First Grill

Grill at maximum heat for 10 minutes.

5. Flip & Season Again

• Remove from the oven and flip the pumpkin slices.

• Season the other side again with salt, pepper, paprika powder, and garlic powder.

6. Final Grill

• Grill for another 10 minutes or until beautifully browned and slightly charred on the edges.

7. Serve

• Serve immediately with shaved parmesan, or reheat in the air fryer (200ºC for 3 mins) if not eating straight away.
