With the haze lately, I’ve been cooking more nourishing soups for the family, and this Cordyceps Fishmaw Soup is one of my favourites. 🍲

Cordyceps has traditionally been used to support energy, stamina and respiratory health, so I thought it would be a comforting soup to make for the kids during these hazy days.

I used pork ribs as the base, together with a Premium Cordyceps Fishmaw Soup Pack. I love how convenient these soup packs are — just rinse, add everything to the pot, season with a little salt and let it simmer.

It’s an easy, comforting soup that requires very little preparation, yet makes a lovely nourishing addition to a family meal.

Here’s how I do it!

Ingredients

500g pork ribs or pork bones

1 packet Premium Cordyceps Fish Maw Soup Pack

Salt, to taste

Method

• Blanch the pork ribs or bones, then rinse and clean them thoroughly.

• Rinse the soup pack.

• Add the pork ribs or bones and soup pack to a pot. Add enough water to cover the ingredients and bring to a boil.

• Add salt to taste and stir well.

• Lower the heat and simmer for 2 hours. Serve hot.
