Jumeokbap (주먹밥) literally means “fist rice” in Korean, referring to rice that is shaped by hand into little balls. You can add pretty much anything you like, but recently my kids saw a version made with luncheon meat and asked me to make it for them!

It may not be the healthiest meal, but it’s definitely a delicious one. The best part? It’s incredibly easy to make — just mix everything together, mould it, and you’re done. The kids loved it so much that they even brought the extras to school the next day!

Here’s how I do it!

Ingredients
2-3 cups cooked rice
2 tbsp sesame oil
½ can luncheon meat, diced
3 eggs, scrambled and finely chopped
Seaweed, crumbled
Sesame seeds

Method

1. Pan-fry the diced luncheon meat until lightly browned and crispy.

2. Scramble the eggs, then chop them into small pieces.

3. Combine the cooked rice, luncheon meat, eggs, seaweed and sesame seeds in a large bowl.

4. Drizzle in the sesame oil and mix everything well.

5. Take a handful of the mixture and mould it into a ball using your hands, or use an onigiri mould.

6. Serve immediately or pack them for a handy snack or lunch! 🍙
