Sometimes, the simplest things make the best soup. 🀍

This simple soup stock uses just chicken carcass, soybeans and ikan bilis, but it’s packed with natural flavour. I like making a pot in advance so I always have a homemade stock ready for noodles, soups and quick meals on busy days.

Simple ingredients, slow simmering, and a comforting bowl of goodness. 🍲✨

1 chicken carcass

50g soybeans, washed

20g ikan bilis, washed

1.5l water

Method

1. Place the chicken carcass into a large pot.

2. Add the washed soybeans and ikan bilis.

3. Fill the pot with water.

4. Bring to a boil. Lower the heat and simmer gently for 2 hours.

5. Strain the stock and discard the solids.

6. Use the stock as a base for noodles, soups or other dishes.
