This Thai-style stir-fried cabbage is one of those simple dishes that comes together in no time, yet is packed with flavour. With just a handful of everyday ingredients, the cabbage is stir-fried with garlic, oyster sauce and fish sauce, then lightly steamed until tender while still retaining a little crunch.

It’s an easy vegetable side dish that goes beautifully with steamed rice and just about any main course — simple, comforting and perfect for busy weeknight dinners.

Here’s how I do it!

Ingredients

1 head cabbage, cut into bite-sized pieces

2 tbsp minced garlic

1 tbsp oyster sauce

1 tbsp fish sauce

A little water

Cooking oil

Method

1. Prepare the cabbage

• Cut the cabbage into bite-sized pieces and soak in water for a few minutes to help plump it up.

• Drain well using a strainer.

2. Sauté the garlic

• Heat a little oil in a wok over medium-high heat.

• Add the minced garlic and sauté until fragrant.

3. Stir-fry the cabbage

• Add the cabbage and toss well.

• Add oyster sauce and fish sauce to taste, then stir-fry to combine.

4. Steam-cook the cabbage

• Add a small splash of water and cover the wok with a lid.

• Let the cabbage cook for a few minutes until soft but still slightly crunchy.

5. Serve

• Give everything a final toss, taste and adjust the seasoning if needed.

• Serve hot with steamed rice.
