Addictive Bacon & Tomato Onsen Egg Pasta

This… is my secret pasta — and I’m finally sharing it with you. 🍝

This is one of those meals I make when the husband isn’t around for dinner and I just want something simple, comforting, and guaranteed to make the kids happy. It’s technically a one-pot meal (okay… maybe two if you count the pasta pot), but it comes together so easily and always hits the spot.

Smoky bacon, a rich tomato base, pasta cooked directly in the sauce, and finished with a silky onsen egg that melts into everything… it’s cosy, comforting, and honestly quite hard to stop eating.

To be honest, I think it’s the little bit of spice that makes it addictive. Just enough heat to keep you going back for another bite — and another.

Here’s how I do it!

Preferred pasta (spaghetti, linguine, or fettuccine work great)

1 canned tomato puree

1 tbsp tomato paste

1 packet streaky bacon, sliced into bite-sized pieces

Olive oil

Minced garlic (3–4 cloves)

Dried oregano

1 cup red wine (I prefer Merlot)

1 whole chilli padi

1 tsp Salt

Pepper Chilli flakes

Onsen egg (1 per serving)

Parmesan cheese, generously grated

Method

1. Build the Flavour Base

• In a pan, add a drizzle of olive oil over medium heat.

• Fry the bacon until slightly crispy and fragrant.

• Add minced garlic and sauté until aromatic.

2. Make the Addictive Tomato Sauce

• Pour in the tomato puree.

• Add tomato paste, whole chilli padi, dried oregano, and 1 cup red wine (Merlot preferred).

• Season with salt.

• Let the sauce simmer gently until slightly reduced and flavours deepen.

3. Cook the Pasta (Halfway First)

• In a separate pot, bring salted water to a boil.

• Cook pasta halfway (if packet says 12 mins, cook for 6 mins).

4. Finish Pasta in the Sauce

• Transfer the half-cooked pasta into the tomato sauce.

• Add a ladle of pasta water.

• Cook for the remaining 6 minutes, stirring occasionally until pasta is al dente and sauce thickens beautifully.

5. Plate & Make It Addictive

• Plate the pasta.

• Top with a silky onsen egg.

• Finish with generous parmesan cheese, black pepper and chilli flakes.
