Instant Pot: Lotus Root Soup

This comforting Asian classic gets a modern twist with the Instant Pot! Earthy lotus root, pork bones, and a rich, savory broth—made simple with minimal effort. Perfect for a quick yet nourishing family meal.

Here’s how I do it!

Ingredients

1kg pork bones (soaked in water beforehand to remove blood)

1 pack lotus root, peeled and sliced

1 small dried squid

4 red dates

1 honey date

A handful of wolfberries (goji berries)

1 tbsp salt (adjust to taste)

1.2L water

Method

1. Prepare the pork bones
• Soak in cold water for 30 minutes to remove blood.

• Rinse and set aside.

2. Rinse the Ingredients

• Rinse the sliced lotus root, dried squid, red dates, honey date and wolfberries under running water. Set aside.

3. Add ingredients to the Instant Pot

• Place pork bones, sliced lotus root, dried squid, red dates, honey date, wolfberries and water into the pot.

• Add 1 tbsp salt. Close the lid

4. Pressure Cook

• Close the lid, seal the valve, and set to Pressure Cook on High for 1 hour.

• Let pressure release naturally (about 15–20 minutes).

5. Serve hot

• Enjoy your nourishing and comforting lotus root soup!
