This shredded chicken noodle dish brings back so many fond childhood memories. ❤️

When I was young, I used to visit my maternal grandma, and we would always have lunch at the hawker centre near where she lived. My parents would usually order lor mee, but I wasn’t a fan of its herbal taste as a child, so I would get shredded chicken noodles from the shop next door instead.

I’ve tried recreating this dish a few times, and I’ve finally managed to get it tasting as close as I remember! 🥹 It’s such a lovely feeling to recreate a dish that brings you right back to your childhood.

I’m so happy to finally share this recipe with you. Because good things are meant to be shared! ❤️

Here’s how I do it!

Ingredients

For the Stew Base

2 chicken thighs

4 slices of ginger

1 bunch of spring onions

2 tbsp light soy sauce

2 tbsp dark soy sauce

1 tbsp oyster sauce

1 star anise

Water, enough to cover the chicken

Cornstarch slurry, for thickening

For the Noodles

Mee kia noodles

Vegetables of your choice

Pork lard oil

Crispy pork lard

Green chilli

Method

• Place the chicken thighs, ginger, spring onions, light soy sauce, dark soy sauce, oyster sauce and star anise into a pot. Add enough water to cover the chicken and mix well to ensure the sauces are evenly distributed.

• Bring the mixture to a boil, then lower the heat and simmer for 45 minutes.

• Flip the chicken thighs over and continue simmering for another 45 minutes, or until the chicken is tender and falls off the bone.

• Remove the chicken thighs from the pot and shred the meat. Remove the ginger, spring onions and star anise from the sauce.

• Bring the sauce to a gentle simmer and gradually stir in the cornstarch slurry until it thickens slightly.

• Cook the mee kia noodles in boiling water for about 30 seconds, or according to the packet instructions.

• To assemble, ladle some of the thickened sauce onto a plate and add a drizzle of pork lard oil for that authentic hawker-style flavour.

• Add the cooked noodles and toss well, making sure every strand is coated in the sauce.

• Top with your preferred vegetables and shredded chicken. Spoon over more sauce, then finish with crispy pork lard and green chilli.

• Serve immediately and enjoy your homemade hawker-style shredded chicken noodles!
