Lately, I’ve been craving Mexican food again, so I made a bigger batch of Instant Pot pork carnitas — because if I’m cooking, I might as well plan ahead.
Part of it went straight into these easy cheesy quesadillas, and the rest is already lined up for pulled pork burgers next. Simple, cheesy, and the perfect way to turn one cook into multiple meals!
Here’s how I do it!

1 packet shredded cheddar cheese
Pork carnitas (find my recipe here!)
Oil, for pan
Method
1. Heat a pan over medium heat and lightly grease with oil.
2. Place one tortilla in the pan.
3. Sprinkle cheese evenly over half of the tortilla.
4. Add your fillings on top of the cheese, then add a little more cheese (this helps it stick).
5. Fold the tortilla in half and press gently.
6. Cook 2–3 minutes per side until golden and crispy, and the cheese is fully melted.
7. Remove from pan, rest 1 minute, then slice.
8. Serve with a side of salad.
