Lazy days call for simple recipes, and this sweet & sour popcorn chicken is one of my ultimate “why haven’t I made this in so long?” dishes. I haven’t cooked it in a while, but the kids recently asked for it — and that was all the motivation I needed.
With crispy air-fried popcorn chicken tossed in a tangy, glossy sweet & sour sauce, it’s the kind of quick comfort food that makes everyone at the table happy with almost no effort.
Here’s how I do it!
Ingredients
300-400g frozen popcorn chicken
Sweet & Sour Sauce:
3 tbsp ketchup
2 tbsp white vinegar
2 tbsp raw sugar
1 tbsp light soy sauce
1 tbsp water
1 tsp cornstarch mixed with 1 tbsp water (for slurry)
1 tsp minced garlic
Method
1. Air fry the popcorn chicken
• Spread frozen popcorn chicken in a single layer.
• Air fry at 200°C for 8–10 minutes, shaking halfway until crispy and golden.
2. Make the sweet & sour sauce
• In a small bowl, mix: ketchup, white vinegar, brown sugar, light soy sauce, water and minced garlic.
• Bring to a simmer on medium heat.
• Stir in the cornstarch slurry and cook until the sauce thickens and becomes glossy.
3. Combine
• Add the crispy popcorn chicken into the sauce and toss until everything is evenly coated.
4. Serve
• Serve with steamed rice.
