Whenever I have leftover rice at home, my go-to dish is always fried rice. It’s quick, hearty, and loved by everyone at the table. This Indon-style Fried Rice is my personal take — loaded with protein of choice, egg, veggies, a touch of sweetness from kecap manis and umami from addictive sambal terasi at the side. Simple, satisfying, and perfect for busy weeknights or easy weekday lunches.
Here’s how I do it!
Ingredients (serves 2-3)
2 cups cooked rice (preferably day-old)
200g protein of choice, slice or diced
2 eggs
3 cloves garlic, minced
1.5 tbsp kecap manis (sweet soy sauce)
1 tbsp oyster sauce
1 tsp dark soy sauce (for colour)
1/2 cup frozen mixed vegetables
1 tbsp sambal terasi (served separately)
2 tbsp oil
Method
1. Cook the Protein
• Heat oil in a pan, fry protein until fully cooked. Set aside.
2. Prepare the Eggs
• Fry eggs (sunny side up or scrambled). Set aside.
3. Sauté the Base
• In the same pan, sauté garlic until fragrant.
• Add frozen vegetables, oyster sauce, kecap manis, and dark soy sauce. Mix well.
4. Add the Rice
• Add in cooked rice, breaking up clumps. Stir-fry until evenly coated with sauce.
5. Combine Everything
• Return the protein and eggs to the pan.
• Toss until well mixed.
6. Serve
• Serve hot with sambal terasi on the side, or mix it in for extra spice.
