Spinach with Oyster Sauce

Sometimes the simplest dishes are the most satisfying. This spinach with oyster sauce and garlic crisp is a classic side you’ll often find at home. It takes just minutes to prepare, yet the flavours are bold — the freshness of spinach, the umami richness of oyster sauce, and the crunch of garlic crisp come together perfectly with a bowl of hot rice.

Ingredients

1 pack spinach (puay leng)

2 tbsp oyster sauce (good quality recommended)

Garlic crisp (homemade or store-bought)

Method

1. Rinse spinach

• Wash the spinach thoroughly as it often contains soil at the roots.

2. Blanch

• In a pot of boiling water, blanch spinach until just wilted.

3. Drain

• Remove, drain well, and arrange on a serving plate.

4. Season

• Drizzle with oyster sauce and sprinkle generously with garlic crisp.

5. Serve

• Serve hot with rice.
