Ingredients
3 large eggs
4 long beans, thinly sliced
1.5 tsp fish sauce
Oil for frying
Method
1. Prepare the egg mixture
• In a bowl, crack the eggs and beat well.
• Add fish sauce and sliced long beans.
• Mix until combined.
2. Heat the pan
• Add 1–2 tsp oil to a pan over medium heat.
3. Cook the omelette
• Pour in the egg mixture.
• Let it cook undisturbed for 1–2 minutes until the edges set.
• Tilt the pan to spread the uncooked egg, or flip if you prefer a fully cooked, golden omelette.
4. Serve
• Slide onto a plate and enjoy hot — great with steamed rice or as a side dish!
