Meet Instant Pot Bossam — succulent, tender pork belly that practically melts in your mouth! Traditionally simmered for hours, this quick Instant Pot version locks in all the juices and flavour, making it perfect for home cooks.
Paired with the spicy, refreshing Bibim Guksu (recipe here!), each bite is a balance of rich, savoury pork and zesty, chilled noodles. Easy, flavourful, and utterly satisfying — this is Korean comfort food made simple.
Here’s how I do it!
Ingredients
1kg pork belly
1.5L water
1/2 onion, halved
2 leeks, white parts only
1 apple or Korean pear, quatered
1 thumb-sized ginger
1 small bulb of garlic
2 tbsp doenjang (Korean soybean paste)
2 tbsp soup soy sauce
1 tsp black peppercorns
Method
1. Make broth
• Add water, onion, leek, apple/pear, ginger, garlic, doenjang, soy sauce, sugar and peppercorns into the Instant Pot.
2. Add pork
• Place the 1kg pork belly in the broth.
3. Pressure cook
• Seal lid, set valve to Sealing.
• Cook 40 minutes on High Pressure.
4. Natural release
• Allow 15 minutes natural release, then quick release the rest.
5. Rest & slice
• Remove pork, let it rest for 30 minutes before slicing.
6. Serve
• Serve with bibim guksu, on rice, or wrap pork slices in lettuce with ssamjang.
