Bibim Guksu

When the weather gets warm or I’m craving something light yet flavourful, Bibim Guksu is always my go-to. It’s a refreshing Korean cold noodle dish tossed in a sweet, tangy, and slightly spicy sauce that instantly wakes up your taste buds.

What I love most is how quick and versatile it is—you can prepare it in under 20 minutes and pair it with any protein you like — I love it with soft boiled eggs and sliced bossam!

It’s the perfect balance of spicy, savoury, and refreshing—like summer in a bowl!

Here’s how I do it!

Ingredients (serves 2-3)

150g guksu noodles

1 tbsp sesame seeds

Sliced bossam (recipe here!)

Soft boiled eggs (Using the IP! Recipe here!)

Bibim Sauce Mix

1.5 tbsp gochujang

1 tbsp soy sauce

2 tbsp vinegar

1/2 tbsp sugar

2 cloves garlic, minced

1 tbsp sesame oil

Method

1. Cook noodles

• Bring water to a boil, add guksu noodles, and cook according to package directions (usually 4–5 mins).

• Stir to prevent sticking.

2. Rinse & chill

• Drain and rinse under cold water until noodles are cool and firm.

• Shake off excess water well.

3. Make sauce

• In a bowl, mix together all sauce ingredients until smooth.

• Adjust spice, sweetness, or tang to your preference.

4. Mix noodles

• Toss the chilled noodles with the sauce until evenly coated.

5. Assemble

• Divide noodles into bowls.

• Top with your protein of choice and sprinkle with sesame seeds.

6. Serve

• Enjoy immediately as a refreshing, spicy-sweet cold noodle dish!
