Pulled Pork Burger

There’s something so satisfying about making a dish that stretches into more than one meal. Pulled pork is one of those recipes that just gets better with time—the flavours deepen and develop after a night in the fridge, making the leftovers even more irresistible.

I love how one dish can easily become two completely different meals. On busy days when I don’t feel like cooking from scratch, I simply reheat the pork, pile it onto soft brioche buns, and voila!—a hearty pulled pork burger is ready in minutes. Quick, comforting, and full of flavor, it’s the perfect way to turn yesterday’s dinner into today’s easy feast.

Here’s how I do it!

Ingredients

Leftover Pulled Pork (find my recipe here!)

Brioche Burger Buns

Toppings:

Onions, thinly sliced

Lettuce

Tomatoes

Method

1. Cut the brioche buns

• Slice each brioche bun in half horizontally.

2. Reheat the pork

• Warm up the leftover pulled pork in a skillet or microwave until hot.

3. Assemble and toast

• Place the pulled pork evenly on the bottom half of each bun. Close with the top half.

• Pop the burgers into a preheated oven at 180ºC for 2–3 minutes to lightly toast. (Keep a close eye so they don’t burn.)

4. Add toppings

• Remove from oven.

• Lift the top bun and layer on onion slices, and preferred toppings (lettuce, and tomato).

5. Serve

• Place the burgers on plates and serve with a fresh side salad.
