Ingredients
2 chicken thighs
1 herbal soup pack (store-bought Chinese herbal mix)
1/2 tbsp salt
1.2L water
Method
1. Start the soup
• In a pot, add 1.2L water, chicken thighs, herbal soup pack, and salt.
2. Boil and simmer
• Bring everything to a boil over high heat.
• Once boiling, lower the heat and simmer gently for 1 hour with the lid on.
3. Adjust if needed
• Check occasionally. Add more water if too much has evaporated.
4. Serve
• Remove from heat.
• Serve hot with rice or as a nourishing broth.
