Instant Pot: Gyudon (Yoshinoya style)

Another go-to lazy dinner for nights when I really don’t feel like cooking—made so much easier with the Instant Pot!

The usual stovetop method takes over an hour, but this version was ready in just 45 mins (plus a bit of prep).

So delicious, the little one asked for seconds… then thirds!

Here’s how I do it!

Ingredients

1 onion, thinly sliced

500g beef short plate, thinly sliced

For the sauce:

1 cup dashi water (1 cup water + 5g dashi powder)

4 tbsp sake

4 tbsp mirin

5 tbsp soy sauce

2 tbsp sugar

To serve:

Steamed Japanese rice

Onsen egg (Instant Pot recipe here!)

Method

1. Prepare the sauce

• In a small bowl, mix together: dashi water, sake, mirin, soy sauce, and sugar.

• Set aside.

2. Sauté onions

• Set Instant Pot to Sauté mode.

• Add a little oil, then add sliced onions and sauté for 2–3 mins, until slightly soft.

3. Add beef and sauce

• Add the beef and pour in the sauce mixture.

• Stir gently to combine.

4. Pressure cook

• Cancel Sauté. Close the lid and set the valve to Sealing.

• Cook on High Pressure for 30 mins (45 mins for tougher meats).

5. Quick release

• Once done, quick release the pressure.

• Switch to Sauté mode and simmer for 5 mins to reduce sauce slightly.

6. Serve

• Scoop hot rice into bowls.

• Top with beef, onions, and a spoonful of the sauce.

• Add an onsen egg and sprinkle with furikake.
