Sliced Pork with Green Chilli

Back when we were living in China, this was one of our go-to dishes—simple, spicy, and full of flavour. We’d often order it at little local eateries, always served piping hot with a big bowl of rice. Today, I recreated it at home: Sliced Pork with Green Chilli. Here’s how I made it!

Ingredients

600g pork belly strips

3 green chilli, sliced

2 tbsp minced garlic

1 tbsp oyster sauce

1 tbsp dark soy sauce

Method:

1. Prepare the ingredients
• Slice the green chillies. Set aside.
2. Heat the pan
• In a large pan or wok, heat a bit of oil over medium-high heat.

3. Add pork
• Add the sliced pork belly and cook until the edges are lightly browned and the fat is starting to render.
4. Add garlic
• Add minced garlic and stir-fry until fragrant.

5. Add green chilli

• Toss in the sliced chillies and stir-fry for another 1–2 minutes until the chillies are slightly softened but still have a crunch.

6. Add sauces
• Stir in the oyster sauce and dark soy sauce, mixing well to coat the meat evenly.

7. Serve
• Remove from heat and serve hot with steamed rice.
