Thai Grilled Pork Collar

Thai Grilled Pork Collar is a delicious way to enjoy tender, juicy pork with rich, savoury Thai flavours. The simple marinade enhances the natural sweetness of the pork, while grilling gives it a beautifully smoky, caramelised finish. Perfect for an easy midweek dinner or a relaxed weekend meal.


Ingredients (Serves 2–4)

500g pork collar (also known as pork neck or shoulder)

2 tbsp oyster sauce

1 tbsp soy sauce

1 tbsp fish sauce

1 tbsp raw sugar

2 cloves garlic, finely chopped

Method

1. Marinate the Pork

• Cut the pork collar into thick strips or leave it whole, depending on preference.

• In a mixing bowl, combine the oyster sauce, soy sauce, fish sauce, sugar, oil, garlic, and pepper.

• Add the pork and coat thoroughly in the marinade.

• Cover and leave to marinate in the fridge for at least 1 hour, or overnight for best flavour.

2. Heat the Grill

• Preheat a grill or griddle pan over a medium-high heat.

• Lightly oil the grill or pan to prevent sticking.

3. Cook the Pork • Place the pork on the hot grill and cook for 5–6 minutes on each side, or until nicely charred and cooked through.

• The outside should be caramelised, and the inside tender and juicy.

4. Rest & Serve

• Leave the pork to rest for 5 minutes before slicing. This helps keep it moist and flavourful.

• Slice thinly and serve with sticky rice, fresh herbs, or a tangy Thai dipping sauce if you like.
