Special Fried Rice

This fried rice recipe is perfect for busy days when you want something quick, easy, and flavourful. With just a few simple ingredients, you can whip up a satisfying meal in 15 minutes!

Ingredients (Serves 2-3)

2 cups cooked rice (preferably day-old)

2 large eggs

½ can luncheon meat, diced (or substitute with sausages)

1 cup frozen mixed vegetables

1 tbsp oyster sauce

1 tbsp dark soy sauce (for colour)

1 tbsp ABC kecap manis

1 tbsp garlic, minced

1-2 tbsp vegetable oil (for frying)

Extra Sunny side up (optional)

Method

1. Scramble the Eggs

• Heat 1 tbsp vegetable oil in a large pan or wok over medium heat.

• Crack the eggs into the pan, season with a pinch of salt, and scramble until fully cooked.

• Remove the eggs from the pan and set aside.

2. Cook the Luncheon Meat

• In the same pan, add 1 tbsp of oil if needed and cook the diced luncheon meat over medium heat until it gets lightly crispy and browned (about 3-4 minutes).

• Remove from the pan and set aside with the scrambled eggs.

3. Fry the Rice

• In the same pan, saute garlic until fragrant.

• Add the frozen mixed vegetables to the same pan and stir-fry for 2-3 minutes, until heated through.

• Add in oyster sauce, dark soya sauce and kecap manis. Mix well.

• Add the cooked rice into the pan with the vegetables. Use a spatula to break up any clumps.

• Stir-fry for 3-5 minutes, allowing the rice to get lightly browned and crispy.

4. Add the Eggs and Luncheon Meat

• Add the scrambled eggs and luncheon meat back into the pan. Stir everything together until evenly mixed.

5. Serve & Enjoy

• Serve the fried rice hot, add in an extra sunny side up if desired.
