Not your average Thai Basil Pork

For those who have been following my hydroponics journey will know that I have lots of basil plants. They grow exceptionally fast and I have to trim them weekly because they keep touching the lights!

Well, these basil is not exactly for Thai Basil Pork – they use a different variety of basil. But! I prefer using these for my basil because they smell and taste AMAZING! Thai basil is a little on the bitter side and I don’t quite like it (neither do the kids).

So, because of weekly trimmings (I change nutrients water and trim every Wednesday), the kids are delighted to have Thai Basil Pork on a weekly basis. They now call it Basil Pork Wednesdays!

This is highly addictive and goes well with salad as well! Do give this a try and let me know if you like it as much as my kids (and I) do!

To recap, below is the list of ingredients for my Thai Basil Pork Recipe.

Ingredients (serves 4)

500g Minced Pork, marinated with 2 tbsp fish sauce

6-8 cloves Garlic, pounded in pestle and mortar

2 Chili Padi (or more if you want it spicier)

2 large handfuls of Basil

4 Eggs, for sunny side up

2 tbsp Oyster Sauce

2 tsp Dark Soy Sauce

Method:

  1. In a heated pan, add 1 tbsp of cooking oil.
  2. Saute garlic and chili padi until fragrant and add minced pork.
  3. Add in oyster sauce, dark soy sauce and mix well.
  4. Add in basil leaves and fry until leaves have softened.
  5. Serve with rice and a sunny side up.
