Ingredients (Serves 2-3)
500g Brussels sprouts, trimmed and halved
2 tbsp olive oil (for frying)
Salt & freshly ground black pepper, to taste
Method
1. Prepare the Brussels Sprouts
• Trim the ends of the Brussels sprouts and remove any yellow leaves.
• Cut each sprout in half lengthwise for even cooking.
2. Pan-Fry to Brown
• Heat 1 tbsp olive oil in a large skillet over medium-high heat.
• Once the oil is hot, add the Brussels sprouts, cut-side down.
• Cook for 5-7 minutes, without stirring, allowing the cut sides to brown and caramelise.
• Stir occasionally to brown the outer leaves, but keep the cut side down as much as possible for that crispy effect.
3. Transfer to the Oven
• Preheat your oven to 200°C.
• Once the Brussels sprouts are nicely browned, transfer them to a baking sheet.
• Drizzle with 1 tbsp olive oil, season with salt, pepper and garlic powder.
• Spread them out in an even layer.
4. Roast Until Tender
• Roast in the oven for 10-15 minutes, tossing halfway through, until the Brussels sprouts are tender and the outer leaves are crispy.
