Easy Ham Croissant

Who says lunch has to be complicated? Sometimes, the simplest meals are the ones that work best — especially on busy school days.

My boy usually has a late recess in school, and by the time he gets home, he’s often not very hungry. So instead of preparing a full meal, I’ve learned to keep things simple. If there are leftovers from the previous day’s dinner, I’ll serve those. Otherwise, I’ll pick up a few easy ingredients that I can quickly assemble into a light lunch.

This has become one of my favourite mum hacks — keeping lunch easy, fuss-free and still satisfying. Perfect for days when appetites are small, but you still want something fresh and nourishing on the table.

Here’s how I do it!

Ingredients

1 croissant

4–5 slices shaved ham

Handful of arugula

Cherry tomatoes

Salt & pepper

Balsamic vinegar

Olive oil

Method

1. Toast the Croissant

• Place the croissant in the air fryer or oven and toast at 180°C for 3 minutes until warm and slightly crispy.

2. Prepare the Filling

• Carefully slice the croissant open and stuff with 4–5 slices of shaved ham.

3. Make the Simple Arugula Salad

• On a plate, add arugula and cherry tomatoes.

• Drizzle with olive oil, balsamic vinegar, salt and pepper

• Toss gently to combine.

4. Serve & Enjoy

• Place the ham croissant next to the fresh arugula salad and serve immediately.
