Easy Chicken Soup (for the soul)

There’s something comforting about a pot of Chicken Soup for the Soul simmering on the stove.

The haze has been pretty bad, and soon the kids and the hubs started getting sniffy. So the hubs requested my “soul-soothing” chicken soup — the one I make whenever the family needs a little comfort.

This soup isn’t just for sick days either. It’s great for kids in sports, as the chicken provides protein for muscle recovery, while the warm broth helps with hydration and nourishment after long training sessions.

And after long school days or heavy workloads, a warm bowl of soup is gentle, easy to digest, and comforting — sometimes that’s exactly what tired minds and bodies need.

Here’s how I do it!

1 whole chicken

3 carrots, peeled and sliced

3 celery stalks, sliced

1 onion, quartered

2-3 garlic cloves

Salt, to taste

Water (enough to cover the chicken)

Method

1. Prepare the Chicken

• Place chicken in a large pot.

2. Add Vegetables

• Add carrots, celery, onion and garlic to the pot.

• Season lightly with salt.

3. Add Water and Simmer

• Pour in enough water to cover the chicken.

• Bring to a boil, then reduce heat to low.

• Skim off any foam that rises to the top.

4. Cook Slowly

• Cover partially and simmer for 1.5–2 hours, until the chicken is fully cooked and tender.

• Top up with water if the liquid level drops.

5. Finish the Soup

• Taste and adjust seasoning.

6. Serve Warm

• Ladle into bowls and enjoy with some crusty bread or rice if you like.
